Extreme Basil Chicken with Cashews

The name comes from a contest that Cox Farms, of Chantilly VA, conducts every year. They give away a free basil seedling in the spring. In late summer / early fall, you then submit your Extreme Basil recipe. So, herewith:

  • 1-1/2 to 2 lb chicken breasts
  • 1 cup white wine
  • 2  Tbl lime juice
  • 1 medium yellow onion,
  • 1 bunch spring onions
  • 4-5 cloves garlic
  • 3-4 serrano peppers, or to taste
  • A 1” piece of ginger, sliced
  • 1 Cup Fresh Basil leaves
  • 2 cups sliced mushrooms
  • 1 cup cashews
  • 1 Tbl soy sauce
  • ½ tsp each, fish and oyster sauces
  • Sri Racha to taste

 

1.      Combine all liquids, saving out 1 TBL of lime juice.

2.      Slice chicken breasts into bites and put to marinate.

3.      Chop the onion and garlic, heat a wok with a bit of olive oil.

4.      Brown the chicken, saving the liquid on the side.

5.      Add liquid and all vegetables except basil and cashews.

6.      Simmer until chicken is done and onions are translucent.

7.      Add the basil, cashews, and final tablespoon of lime juice

8.      Stir and serve. Serves 2-3.
